A rustic sparkling white for any occasion. The grapes are picked by hand, destemmed and fermented spontaneously in vats before macerated for about two weeks with the skin resulting in present tannins and a dry experience. It is aged throughout winter before the malolactic fermentation starts with the hot spring air hitting the cellar. The wine is bottled, aged and ready ten months after.
